I have created a signature but I would like include a clickable link in the signature.  Is this possible and if so, how?

yes, HTML is enabled in signatures, although it can be turned off if abused. The syntax for an HTML link is

<a href="http://www.yoururlhere.net">Click me</a>

the <a> and </a> tags surround the text that is the link, as in Visit my website

The syntax <a href="mailto:steve@domain.com">send me email</a> will open the visitor's email client.
